Pasta Salad

  • 2 cups uncooked rotini pasta

  • 1 cup broccoli florets

  • ½ cup fresh or frozen sugar snap peas, thawed

  • ¼ cup yellow cherry tomatoes

  • 2 cups plain low-fat yogurt

  • 1 tablespoon grated Parmesan cheese

  • 1½ teaspoons snipped fresh basil or ½ teaspoon dried basil leaves

  • 1 teaspoon minced garlic

  • ½ teaspoon black pepper

  • ¼ cup chopped walnuts, toasted, if desired

  1. Cook pasta according to package directions until tender. Cool under cold running water and drain well.

  2.  Cut broccoli florets into bite-size pieces. Steam broccoli 1 minute. Cool under cold running water and drain well. In a medium bowl, broccoli, sugar snap peas, and tomatoes.

  3. In a small bowl, combine yogurt,  Parmesan cheese, basil, garlic, and pepper. Pour dressing over salad mixture and toss to coat. Garnish with toasted chopped walnuts, if desired.

    Fresh Strawberry milkshake

  • 1/2 cup skim milk

  • 1 banana

  • 3 strawberry

  • 1 cup ice​

  • whip cream (optional)

  • 2 tablespoons olive oil

  • 1/2 yellow onion diced

  • 1 carrot chopped

  • 1 celery rib chopped

  • 3 cloves garlic chopped

  • 2 tablespoons tomato paste

  • 2 bay leaves

  • 1 (28 ounces) can crushed tomatoes

  • 1 (12-ounce) jar roasted red peppers drained

  • 1 1/2 cups vegetable broth

  • Dash of crushed red pepper

  • 3 tablespoons chopped fresh basil

  • Freshly chopped basil and croutons for garnish optional
